Salad with baby spinach, Salame Felino IGP (Salame Felino PGI), feta cheese, black olives and piadina triangles (thin flatbread)

Ingredients:
- 2 piadinas (thin flatbread)
- 1 handful baby spinach
- ½ Veroni Salame Felino PGI
- 100 g feta cheese
- 1 handful black olives
- fresh thyme
- extra virgin olive oil
- white wine vinegar
- salt
- pepper
Steps:
Cut the Salame Felino PGI into slices and set aside. Mix the baby spinach, black olives, diced feta and thyme in a bowl. Season with olive oil, salt, pepper and vinegar to taste.
Serve along with the salami and piadina* cut into triangles and heated in a pan (or in the oven). (*thin flatbread)
