Summer is the season of peppers! We love them because they add color and taste to our favorite dishes with Veroni cold cuts.

Ingredients for 4 people:
– 14 oz of penne pasta
– 7 oz of cooked ham
– 2 red peppers
– ½ of a garlic clove
– 0.7 oz of grated parmesan cheese
– 1 chili pepper
– Basil and fresh thyme
– extra virgin olive oil
– salt and pepper

Steps:

  1. Preheat the oven to 250º F
  2. Roast two red peppers in an oven until soft (about 30-40 minutes)
  3. Remove the seeds in the peppers and chop them in pieces
  4. Blend the peppers with parmesan cheese, chili pepper without seeds, garlic, aromatic herbs, and oil
  5. Once you have the cream, add salt and pepper
  6. Boil the penne pasta, drain it (but keep the pasta water), and transfer them into a warm salad bowl
  7. Flavor the pasta with pepper cream and shredded ham
  8. To adjust the consistency, mix it with a little bit of the remaining pasta water
  9. Transfer to dinner plates and serve!
