If you don’t know where to start, don’t worry, we got you covered. Here’s a recipe that combines these two ingredients and a perfect cocktail pairing for your aperitivo.

Recipe

  1. Lay a strip of pancetta on a cutting board, place a dried prune on the top edge and roll it up, wrapping it tightly around the prune. Pierce a cocktail stick through the centre of the wrapped prune to secure. Repeat with the remaining pancetta and prunes.
  2. Place the rolls on a baking sheet and bake them for 15 minutes, turning halfway through cooking, until the bacon is slightly crispy on both sides.

It’s up to you to choose whether you’d like to change the recipe and add a few ingredients to make it even tastier. You could add a pistachio or an almond inside the prune to make these bites a little crunchier. A highly recommended alternative is cheeses such as feta and caciocavallo, which can add a savoury note to the recipe.

Cocktail pairing

As part of the Italian mixology tradition, Americano is a very appreciated drink for strong flavours lovers. With its dry and bitter aftertaste this cocktail pairs perfectly with cured meats and aged cheeses. The peculiar sweetness of red vermouth resembles the one of the prunes and it gets softened by the bitterness of the Campari.
