Mortadella lover alert! You will go crazy for these pinwheel sandwiches filled with Veroni’s mortadella, ricotta cheese and pistachios.  Check out our quick and easy recipe.

Ingredients for 4-6 serves

9 oz of crustless white bread
7 oz of mortadella
7 oz of ricotta cheese (alternatively soft cheese)
Chopped pistachios

Flatten the slices of white bread with a rolling pin and spread them with ricotta cheese.
Put chopped pistachios and mortadella on top without touching the edge.

Roll each slice tightly from one short side to the other and wrap the rolls with plastic wrap.
Place the rolls in the refrigerator for 2 hours.

After this, slice the rolls into mini rolls and serve.
